I had an itch to bake the other night. I had some banana’s that have been in the freezer ready to be toasted up into something fancy. BUT I’m a terrrrrible baker. One year, I fully convinced my husband that I was going to open up a cupcake shop. HA! I believe every batch I ever made came out tasting like someone spit in it, as dry as sand, or (and I’ll only mention this now because it’s funny) a visit from the fire department. Yep, one time I made monkey bread, the brown sugar dropped onto the bottom of the oven and guess what? A fire started. Our security system is set up so if our fire alarm goes off, they contact the fire department. As we’re putting out the fire, we heard sirens. I was so embarrassed. They even refused my Christmas cookies I tried giving them for their trouble.
Anyway, I wanted banana bread and I had found different recipes off Pinterest but none ticked my fancy for these bananers. So I somewhat made a creation from about five different recipes I found. Here is what I came up with, and it came out AWESOME!
THE BEST Greek Yogurt Chocolate Chip Banana Bread
(Makes One Loaf)
What you will need:
1 1/2 cups whole wheat flour
1 tsp baking soda
1/2 cup honey
1/2 tsp salt
1/2 cup coconut oil (melted)
2 eggs (I used egg whites)
1/2 cup vanilla greek yogurt (I used Chobani)
1 tsp pure vanilla extract
3 large ripe bananas
1/2 cup semi sweet chocolate chips
cinnamon
What you do:
Preheat your oven to 350 deg F and spray your loaf pan with coconut oil cooking spray. In your electric mixer, combine eggs, oil, honey, and vanilla. In another bowl, sift together flour, baking soda and salt. Add the dry ingredients to the wet, and mix throughly. Add in the bananas, and greek yogurt. Then, add in your chocolate chips. Pour the batter into your loaf pan and sprinkle the top with cinnamon. Bake for about an hour, or until a toothpick comes out clean. Let cool for about 5 minutes before enjoying.
